Guest Blogging at it’s finest!!!

I’ve been very fortunate the last half of 2014! I’ve been published in the 3-17-14 issue of Woman’s Day magazine for my weight loss story.

May I was featured as the Fit Mom Diet “Momspiration” sharing my weight loss story, what it’s like to have celiac disease, personal favorites, motivation and inspiration I others!!
In June I was featured as the very first guest blogger for Click Espresso Protein drink. I shared my weight loss story, favorites, inspiration and love of Click!!
Just recently, I was just featured as a guest blogger “weight loss success story” on the Bulu Box blog. I wrote about commitment to yourself, ways to stay motivated, being on a restricted diet due to celiac and eTing gluten free.

After being so fortunate to share my story in hopes that others struggling with the same issues (celiac, weight loss, finding gluten free snack choices, feeling good about yourself and the motivation to continue your journey) will find inspiration in my words knowing I have been there, done that and rose to the top. “I aspire to inspire” and will bend over backwards to help anyone who asks for help.

At this point I’m teaching 7 plus classes (Boot Camp and HIIT) a week and finalizing my Certified Personal Trainer certification. I’ve done one on one training and or classes to help individuals who are uncomfortable being in a group “class” at the beginning of their journey, in order to streamline them slowly into a class setting.
On top of that I’ve started my own photography business (which I’ve always wanted and have been trained/certified for awhile now.) I just never had the free time with the kids being small and put it off. Now, I’m doing both fitness and photography and couldn’t be happier. 😃
One more benefit, I hope, I’ve got in the works is going back to school in the fall full time for fitness/health and a side of photography fun!! I’m so excited!!!!!

Glutino……everything gluten free


Glutino gluten free products are some of my absolute favorites! The white sandwich bread is by far the best consistency of any white gluten free bread. I didn’t even know the difference after just eating it plain or made into a sandwich.

I used that bread for 3 days in the kids lunches. My daughter is celiac like me so finding lunch options are hard. The typical go to is a sandwich and finding a decent bread has been mind numbing until now! She lived it and my boys had no clue it was any different from the usual bread I use. The next few days I used the multigrain gluten free bread which was surprisingly soft and tasty as well. The boys realized mainly due to it being an off white color with noticeable grains within each piece but didn’t complain at all. They liked the idea of me doing something different for their lunches as they tend to get boring. My daughter once again lived the idea of an actual sandwich and was eating the bread plain when I got home that same day.

Glutino pretzels are my favorite! In the past I’ve used the pretzel sticks in my gluten free chex mix and enjoyed straight from the bag for a quick pick me up. I was blown away by the honey mustard flavor! Can you say scrumptious? There is no way that these are gluten free and can still taste this great. My daughter couldn’t wait to get her hands on them and soon after the bag was missing. All I got was a few but it was enough to make me run out and buy more!
My overall rating on these products is a 12 out if 10! Above and beyond in taste, quality and selection!!! I recommend getting all of it the next time you grocery shop!

May is Celiac Awareness month! A few gluten free product reviews…


Recently I had the chance to try Nugo Stronger protein bars. These bars are certified gluten free and range from 25 to 27 grams of protein sourced from whey and rice. There are no artificial sweeteners, no maltitol and they are non-GMO. This equals 55% less sugar than a regular high protein bar! The average calories for each bar is 290.

Seriously, I had just blasted some serious fat and calories with a killer train Dirty Fitness 60 minute Bootcamp session and was in need of so e serious nourishment so I grabbed the cookies and cream Nugo bar! Having celiac my options for most things are limited but I have to tell you, that bar tasted just like I remember an Oreo! It was so good and filled me up quickly so I felt more level with my blood sugars.

The peanut cluster flavor was remarkable and reminded me of a snickers candy bar. So much that I almost felt guilty eating it. I would highly suggest the next time you want a protein packed gluten free endulgence to pick yourself up a few boxes of these bars to have on hand! I’m out and just writing about them has made me really want one. My overall rating of these bars is a 10 out of 10! Finding anything healthy that’s gluten free and packed with good protein is hard to find. Add finding one that actually tastes great and it’s close to impossible….until now!!

I was recently featured in Woman’s World Magazine (March 17, 2014 issue) for my weight loss journey from heavy and unhealthy to fit and in control of my health! I suffered for 20+ years with chronic severe hives. I went from doctor to doctor only to be subject to testing after testing with no answers and given prednisone and antihistamines to get rid of the problem. Unfortunately, the prednisone literally ruined my body in every way possible! I went from a size 0/3 to a 28W as I gained weight from the medicine, my immune system became reduced to nothing and I still had no relief. I was diagnosed bipolar in 2003 and given other horrible, weight gaining medications. In 2010 I met with a new doctor who took one look at me and asked if I ever heard of celiac disease. I hadn’t. She ran a simple test and ordered an upper GI to confirm. I had celiac disease and needed to go 100% gluten free. Devastated, I started my “lifestyle” change with a positive attitude and on a mission to feel better and lose weight. I lost 73 pounds in 4 months by eating clean (gluten free) and exercising once a day and sometimes twice. I felt wonderful and the hives vanished! Since, I’ve stepped it up to heavy weight lifting, cross fit, HIIT along with Bootcamp. I live, breathe and preach fitness and proper diet. Right now, I’m at a total 88 pounds lost and have muscles!! I’ve found that reaching out and helping or inspiring others has become my “thing”. My goal is simple. If I can do it anyone can and I am willing to help anyone reach their goals. If I can help save just one person from the 20 years of hell that I went through, I will be happy!


4. 3 who walk the earth with me and one in heaven as our guardian angel! Gabrielle is about to graduate and turn 18. Connor is about to turn 16 and Maxwell will soon be a teenager (13).


Being celiac, I’m limited and rarely eat off my diet. I’ve found that no matter how much I may want something, suffering for a week after is not worth it. I don’t actually have a cheat day or full meal. I guess my “cheat” food would be coconut milk chocolate “ice cream” or some dark chocolate. Besides that I consider not drinking alcohol all week and saving those calories for the weekend If I feel inclined. I love a good moscato or my personal fail safe, Angry Orchard gluten free hard cider.


I never leave the house without a purse full of protein bars!! I never know when I may feel a drop in blood sugar or need an extra pick me up. Plus, I can’t always find a ” gluten free friendly” restaurants to fill my needs. I usually make sure I eat something that will stay with me for awhile prior to leaving or I pack a cooler bag with snacks and plenty of water for the day.


Popcorn!!!! I’m a popcorn addict and can’t go a day without it! I eat it so often that we actually bought an old fashioned popcorn maker that sits on my counter and never stays clean! If I don’t get my popcorn in daily I become “hangry”!


Since I eat clean for every meal, many have become favorites. I do have one that I crave often, however. Making an egg bake or quiche minus the crust with a mix of whatever I have available in the fridge is my favorites. Eggs (family) or egg whites for just me with spinach, red onion, broccoli, sweet peppers, a dash of oregano and topped with Colby shredded cheese. Sometimes I make them in muffin pans so they are easy on the go. For a meal, I bake in a glass Pyrex dish and cut in squares.


Being celiac, the list never ends and each day I rethink other foods that I can’t tolerate anymore. I avoid all gluten, most dairy, corn, oatmeal, white potatoes, rice and quinoa. My digestive system is so worn down and ruined from years of eating gluten that I can’t digest a lot of foods anymore. I also have leaky gut which is tiny perforations in my intestines which make my system sluggish so my gut tells me what I can and cannot eat.


I love kettle bells!! I usually use them while doing swing squats and get a kick but workout! All versions of squats in general are my go to for my all over body workouts. I also love all versions of planks. Anything that works the body as a whole and strengthens the core.


I look at everyday as a blessing I’ve been given and there’s a reason I’m still here and inspiring others! Knowing that I can help others is truly rewarding. My moto is, “I aspire to inspire!” It doesn’t matter the setting or time, if someone reaches out to me for help, I’m there. I will do whatever possible to help guide them to a better lifestyle.


Set a goal and plan your path to reach it. Make it realistic and don’t take shortcuts. I myself sat down and made a Bucket List prior to starting my journey and as I reached even the smallest goal it motivated me to keep working! I even made buying a Harley and riding that Harley two of my goals! I bought that Harley and my hubby had to ride it home since I didn’t have a license but you know what, I took a class and got my license! That was something so far past my comfort zone for the “old Sarah” but that’s not me anymore and I crossed them off my list!


I write in my blog or workout! I never stay unmotivated for long because that’s a total waste of precious time. I always find something I can do, plan or finish.


I’m a completely new person! I’ve always been A tad shy and being overweight I wanted to hide on a daily basis from things I once loved. I am way more outgoing and will try anything once. Being smaller and much healthier has had a huge impact on my life. My kids have noticed and commented on how great it is to have me feeling better and more active with them. My husband always says, “A happy mom is a happy house!” My house is full of laughter, an assortment of tennis shoes, baseball gloves, a complete gym in the basement and basketballs! That’s just the top of the list. Either way I’m happier and I’m thankful that I took charge of my life!


Simple Stir Fry with Chicken

I don’t usually measure anything out because the way I buy chicken dictates the finished meal.

-5-6 boneless chicken breasts cut up into pieces

-Broccoli cut up

-red onion chopped

-sliced water chestnuts

-red, yellow and orange peppers sliced

-sliced mushrooms

-virgin coconut oil

-Rice noodles

-La Choy soy sauce

-corn starch

Cook chicken in coconut oil until chicken is no longer pink. Add veggies. Cook until veggies are tender. Start a pan with rice noodles on separate burner. While waiting for that to cook and stirring often, mix 4-5 tablespoons of soy sauce with 1/4 cup corn starch in separate bowl. Once chicken and veggies are cooked add soy sauce mixture and let sit for a few minutes. Stir to coat chicken and veggies. Serve over rice or rice noodles.


My journey hasn’t been an easy one and other factors added to my years of depression, weight gain and misery. I lost my grandmother who was my go to for support and tea (1999). Six months later, my mom was diagnosed with Pancreatic Cancer and given 3-6 months. (1999). I found out we were expecting a new baby and that helped her with the beginning of starting chemo. When I was just past 6 months pregnant, I lost my son, Noah (May 3, 2000) to stillbirth. 6 months later I was pregnant again and mom was completing chemo. She decided she couldn’t do it anymore. Maxwell was born and mom was there to hold him for the first and last time. She died 3 months later. (2001). When I was diagnosed with bipolar, there was no test. It was questions and how I felt. I was depressed from many factors most of which were the above issues. After I went gluten free my depression did as well. I took all the medications and flushed them. Gluten played a factor in my depression and messed with my serotonin levels in my brain making it appear I was bipolar and manic depressive. I was never bipolar!! My father had a massive stroke and passed in 2011 and I handled it better off gluten and the meds they had me on. It was after he died that I made major changes and really changed how I started living, thinking and eating. Being celiac it’s a necessity for me to stay strictly gluten free. I cannot “cheat” as this is Not a diet! This is my lifestyle. Going gluten free is not a way to achieve weight loss long term. I have a hard time reaching my vitamin and mineral intake and can easily become malnourished. In turn I have to take added vitamins and supplements daily in order to maintain my caloric intake. Besides that I also have to take thyroid medication and give myself B-12 injections biweekly. I firmly believe the best way to maintain a healthy lifestyle is good old fashioned proper diet (75%) and exercise (25%) daily. As long as what I put in my body is good for me and supports my health and I remain active with exercise, I am able to maintain. I’m not sure what my future holds but I do know that as long as I stay centered and positive, I can face anything that comes up.

We had a great weekend! The weather was decent and we took the bike out and hit some stops on our yearly adventure The Route 66 Cannon Run. Every year we buy 2 books of tickets and we start a new year. There are only 66 stops and we try to hit them all! A few years ago they pushed the limit and had 100 stops and we actually hit 97 of them. Seriously, 66 stops is plenty. It’s fun to hit the same bars each year but a new one or two is always fun.

So we ended up hitting like 4-5 stops Saturday and 3 more on Sunday. Due to it being Easter, one bar wasn’t open but we had a mailbox Dropbox for our tickets. It was gorgeous, 77 and we weren’t wearing jackets. It was a great day. I even took a “selfie” and posted it…

So we ended up hitting like 4-5 stops Saturday and 3 more on Sunday. Due to it being Easter, one bar wasn’t open but we had a mailbox Dropbox for our tickets. It was gorgeous, 77 and we weren’t wearing jackets. It was a great day. I even took a “selfie” and posted it on Facebook.

Upon returning home, we passed so many other bikes on the roads and just enjoyed knowing so many other people got out and enjoyed the weather as well. We we’re beat tired and had gotten some good sun. Once home, we fed the kids and settled in with what we thought was a great weekend and Easter Sunday.

All the sudden my phone started blowing up. A friend instant messages me stating, “Please tell me you are home and safe!” She went on to explain there had been an accident close to where she was at the time and it involved several motorcycles. Knowing we were out riding (from Facebook) she wanted to make sure it wasn’t us. During the next half hour, I got text after text after instant messages asking if we were home and safe. As I started reading the feed on my timeline, a story began to unfold.

The accident happened so fast and involved 5 motorcycles. I’m sure if your like several individuals I know, your thinking, “What kind of motorcycles? Harley’s? Sports bikes? (crotch rockets). Come to find out as the evening unfolded, they were sports bikes and there were 5 in the group. An Infinity QX56 SUV veered across its lane and directly into the oncoming lane. With no reaction time, the first two bikes were hit and down. The other 3 bikes were able to take action and avoid the crash. The driver of the SUV never stopped! It’s now a hit and run. After reading our local police scanner page on Facebook, it became evident that the two young men on the motorcycles which were hit and went down, did not survive. The first one, Mitch Vance, 24 was DOA at the scene and the second Devin Julius, 18 died at the hospital after transport.

As a motorcycle enthusiast, rider and licensed to ride my own, this has impacted me hard. We started in 2010 with a CBR1000RR and then I bought my Harley Sportster 1200 Custom. My husband loved my Harley so we purchased one for him or us together soon after. We got a FatBoy Lo. Within weeks, we had gotten each if our 3 kids a Yamaha dirt bike. A Yamaha YZ 250, Yamaha RT 180 and a Yamaha YZ 100. We had 6 motorcycles in our garage!!! Yes it was a bit much but so much fun! We started liquidating them last year for lack of use, the kids were too busy and I want a different Harley. The CBR1000RR was last to go. My husband loved that bike but I didn’t like it compared to the comfort on a Harley. We still have the FatBoy Lo and once my daughter graduates (few months) I’m getting my new bike!

Need-less-to-say, this has hit the community hard. With updates daily on the hit and run vehicle and the search being broadened into Illinois and body shops, dealerships and neighborhoods all aware of what this coward was driving and what the damage is.

I haven’t really slept much and am actually afraid to get back on the bike. It just doesn’t seem possible that this has happened so close to home. I’ve been interacting with fellow riders from the WSBR club (Wisconsin Sports Bike Riders) and as a whole, it’s amazing to know how much we all have come together to out together a Memorial Ride, we all are updated as to each of the young men’s funerals and getting in contact with family. It’s simply unbelievably amazing! Whether we knew the lost riders or not, it doesn’t matter. We all support each other and are determined to find the vehicle/driver who murdered these two young souls.

Easter didn’t exactly turn out how we figured it would. I know one thing for sure, there are two new Guardian Angel’s watching over all of us as we ride these roads! None of us know when our time on our clock is going to be up, so live it doing what you love. Ride on Mitch and Devin and know you are loved and missed by all who knew and didn’t know you! <img src="" alt="image" width="169"
