First and foremost I am a stay at home mom. I am a certified Train Dirty Fitness Bootcamp and HIIT IT Instructor. Currently I am taking online classes to become a certified personal trainer and simultaneously a sports and nutrition certification. WHAT IS YOUR CLAIM TO FAME?
I was recently featured in Woman’s World Magazine (March 17, 2014 issue) for my weight loss journey from heavy and unhealthy to fit and in control of my health! I suffered for 20+ years with chronic severe hives. I went from doctor to doctor only to be subject to testing after testing with no answers and given prednisone and antihistamines to get rid of the problem. Unfortunately, the prednisone literally ruined my body in every way possible! I went from a size 0/3 to a 28W as I gained weight from the medicine, my immune system became reduced to nothing and I still had no relief. I was diagnosed bipolar in 2003 and given other horrible, weight gaining medications. In 2010 I met with a new doctor who took one look at me and asked if I ever heard of celiac disease. I hadn’t. She ran a simple test and ordered an upper GI to confirm. I had celiac disease and needed to go 100% gluten free. Devastated, I started my “lifestyle” change with a positive attitude and on a mission to feel better and lose weight. I lost 73 pounds in 4 months by eating clean (gluten free) and exercising once a day and sometimes twice. I felt wonderful and the hives vanished! Since, I’ve stepped it up to heavy weight lifting, cross fit, HIIT along with Bootcamp. I live, breathe and preach fitness and proper diet. Right now, I’m at a total 88 pounds lost and have muscles!! I’ve found that reaching out and helping or inspiring others has become my “thing”. My goal is simple. If I can do it anyone can and I am willing to help anyone reach their goals. If I can help save just one person from the 20 years of hell that I went through, I will be happy!
HOW MANY CHILDREN?
4. 3 who walk the earth with me and one in heaven as our guardian angel! Gabrielle is about to graduate and turn 18. Connor is about to turn 16 and Maxwell will soon be a teenager (13).
WHAT IS YOUR FAVORITE TREAT/ CHEAT MEAL? HOW OFTEN DO YOU HAVE A CHEAT MEAL?
Being celiac, I’m limited and rarely eat off my diet. I’ve found that no matter how much I may want something, suffering for a week after is not worth it. I don’t actually have a cheat day or full meal. I guess my “cheat” food would be coconut milk chocolate “ice cream” or some dark chocolate. Besides that I consider not drinking alcohol all week and saving those calories for the weekend If I feel inclined. I love a good moscato or my personal fail safe, Angry Orchard gluten free hard cider.
HOW DO YOU EAT WELL AS A MOM ON THE GO?
I never leave the house without a purse full of protein bars!! I never know when I may feel a drop in blood sugar or need an extra pick me up. Plus, I can’t always find a ” gluten free friendly” restaurants to fill my needs. I usually make sure I eat something that will stay with me for awhile prior to leaving or I pack a cooler bag with snacks and plenty of water for the day.
WHAT FOOD CAN’T YOU LIVE WITHOUT?
Popcorn!!!! I’m a popcorn addict and can’t go a day without it! I eat it so often that we actually bought an old fashioned popcorn maker that sits on my counter and never stays clean! If I don’t get my popcorn in daily I become “hangry”!
WHAT IS YOUR FAVORITE CLEAN MEAL?
Since I eat clean for every meal, many have become favorites. I do have one that I crave often, however. Making an egg bake or quiche minus the crust with a mix of whatever I have available in the fridge is my favorites. Eggs (family) or egg whites for just me with spinach, red onion, broccoli, sweet peppers, a dash of oregano and topped with Colby shredded cheese. Sometimes I make them in muffin pans so they are easy on the go. For a meal, I bake in a glass Pyrex dish and cut in squares.
ARE THERE ANY FOODS THAT YOU AVOID AT ALL COSTS?
Being celiac, the list never ends and each day I rethink other foods that I can’t tolerate anymore. I avoid all gluten, most dairy, corn, oatmeal, white potatoes, rice and quinoa. My digestive system is so worn down and ruined from years of eating gluten that I can’t digest a lot of foods anymore. I also have leaky gut which is tiny perforations in my intestines which make my system sluggish so my gut tells me what I can and cannot eat.
WHAT’S YOU FAVORITE EXERCISE?
I love kettle bells!! I usually use them while doing swing squats and get a kick but workout! All versions of squats in general are my go to for my all over body workouts. I also love all versions of planks. Anything that works the body as a whole and strengthens the core.
HOW DO YOU STAY MOTIVATED?
I look at everyday as a blessing I’ve been given and there’s a reason I’m still here and inspiring others! Knowing that I can help others is truly rewarding. My moto is, “I aspire to inspire!” It doesn’t matter the setting or time, if someone reaches out to me for help, I’m there. I will do whatever possible to help guide them to a better lifestyle.
IF YOU COULD ONLY OFFER ONE TIP TO A MOM TRYING TO GET BACK INTO SHAPE WHAT WOULD IT BE?
Set a goal and plan your path to reach it. Make it realistic and don’t take shortcuts. I myself sat down and made a Bucket List prior to starting my journey and as I reached even the smallest goal it motivated me to keep working! I even made buying a Harley and riding that Harley two of my goals! I bought that Harley and my hubby had to ride it home since I didn’t have a license but you know what, I took a class and got my license! That was something so far past my comfort zone for the “old Sarah” but that’s not me anymore and I crossed them off my list!
WHEN YOU FEEL UNMOTIVATED WHAT DO YOU DO?
I write in my blog or workout! I never stay unmotivated for long because that’s a total waste of precious time. I always find something I can do, plan or finish.
HOW HAS TRANFORMING YOURSELF PHYSICALLY MADE A DIFFERENCE IN YOUR LIFE?
I’m a completely new person! I’ve always been A tad shy and being overweight I wanted to hide on a daily basis from things I once loved. I am way more outgoing and will try anything once. Being smaller and much healthier has had a huge impact on my life. My kids have noticed and commented on how great it is to have me feeling better and more active with them. My husband always says, “A happy mom is a happy house!” My house is full of laughter, an assortment of tennis shoes, baseball gloves, a complete gym in the basement and basketballs! That’s just the top of the list. Either way I’m happier and I’m thankful that I took charge of my life!
DO YOU HAVE A FAVORITE RECIPE TO SHARE?
Simple Stir Fry with Chicken
I don’t usually measure anything out because the way I buy chicken dictates the finished meal.
-5-6 boneless chicken breasts cut up into pieces
-Broccoli cut up
-red onion chopped
-sliced water chestnuts
-red, yellow and orange peppers sliced
-virgin coconut oil
-La Choy soy sauce
Cook chicken in coconut oil until chicken is no longer pink. Add veggies. Cook until veggies are tender. Start a pan with rice noodles on separate burner. While waiting for that to cook and stirring often, mix 4-5 tablespoons of soy sauce with 1/4 cup corn starch in separate bowl. Once chicken and veggies are cooked add soy sauce mixture and let sit for a few minutes. Stir to coat chicken and veggies. Serve over rice or rice noodles.

My journey hasn’t been an easy one and other factors added to my years of depression, weight gain and misery. I lost my grandmother who was my go to for support and tea (1999). Six months later, my mom was diagnosed with Pancreatic Cancer and given 3-6 months. (1999). I found out we were expecting a new baby and that helped her with the beginning of starting chemo. When I was just past 6 months pregnant, I lost my son, Noah (May 3, 2000) to stillbirth. 6 months later I was pregnant again and mom was completing chemo. She decided she couldn’t do it anymore. Maxwell was born and mom was there to hold him for the first and last time. She died 3 months later. (2001). When I was diagnosed with bipolar, there was no test. It was questions and how I felt. I was depressed from many factors most of which were the above issues. After I went gluten free my depression did as well. I took all the medications and flushed them. Gluten played a factor in my depression and messed with my serotonin levels in my brain making it appear I was bipolar and manic depressive. I was never bipolar!! My father had a massive stroke and passed in 2011 and I handled it better off gluten and the meds they had me on. It was after he died that I made major changes and really changed how I started living, thinking and eating. Being celiac it’s a necessity for me to stay strictly gluten free. I cannot “cheat” as this is Not a diet! This is my lifestyle. Going gluten free is not a way to achieve weight loss long term. I have a hard time reaching my vitamin and mineral intake and can easily become malnourished. In turn I have to take added vitamins and supplements daily in order to maintain my caloric intake. Besides that I also have to take thyroid medication and give myself B-12 injections biweekly. I firmly believe the best way to maintain a healthy lifestyle is good old fashioned proper diet (75%) and exercise (25%) daily. As long as what I put in my body is good for me and supports my health and I remain active with exercise, I am able to maintain. I’m not sure what my future holds but I do know that as long as I stay centered and positive, I can face anything that comes up.
